Ingredients:
  • 2 Tbsps butter
  • 1 lb baby carrots Cut in half lengthwise.
  • 1/2 tsp Kosher salt
  • 2 fluid oz orange juice (That's 1/4 cup.)
  • 1 tsp demerara sugar (Aka turbinado or raw sugar.)
  • 2 tsp fresh ginger Grated (but microplaned is best).
  • 1/4 tsp black pepper Fresh ground.

    Ingredients:

    The Meat

  • 3 lbs boneless skinless chicken breast Whole, not cut.
  • The Brine

  • 12 fluid oz water (That's a cup and a half.)
  • 1 Tbsp Kosher salt
  • 3 fluid oz soy sauce
  • 2 fluid oz sweetened lime juice (That's a quarter cup.)
  • 1 fluid oz lemon juice (That's the juice of one small lemon.)
  • 1 fluid oz lime juice (That's the juice of one lime.)
  • 2 tsp liquid smoke (I like Hickory)
  • 2 cloves garlic Smashed.
  • 1 tsp black peppercorns
  • 1 canned chipole chile (or 1 tsp Sriracha)
  • 20 oz ice (A pound and quarter.)
  • Grill Seasoning

  • 1 1/2 tsps Kosher salt
  • 1/2 tsp ancho chile powder
  • 1/2 tsp coriander Ground.
  • 1/4 tsp black pepper (Fresh-ground.)
  • 1/8 tsp True Lime (That's one packet.)

    Ingredients:

    The Jam

  • 16 oz fresh strawberries (One pint; sliced 1/3 in thick.)
  • 16 oz fresh rhubarb (about 3.5 cups chopped into 1/2 in thick pieces.)
  • 12 oz sugar (That's about 1.5 cups)
  • 4 fluid oz blush wine
  • 1 vanilla bean Split lengthwise and scraped.
  • 1/4 tsp cinnamon Ground.

  • 3 tsps baking powder
  • 1 tsp Kosher Salt
  • 2 Tbsps sugar
  • 1/2 cup butter (That's one stick; melted.)
  • 5 fluid oz milk (About 2/3 cup.)
  • mo' melted butter (About 2 Tbsps for finishing purposes.)
  • 1/4 tsp cinnamon Ground
  • 1 tsp fine-crystal raw sugar (Plain sugar will do too.)

  • 2 fluid oz lime juice Fresh (Approximately the juice of 2 limes).

  • 2 Tbsps butter Melted.
  • 2 Tbsps honey
  • 2 eggs Large.
  • 1 tsp Kosher salt
  • 8 fluid oz buttermilk (That's one cup.)
  • 4 fluid oz milk (That's a half cup.)
  • 2 fluid oz mo' milk (That's another quarter cup; use as necessary to thin it to a desired consistency).

  • 1 tsp BBQ Rub (Listed above.)
  • 2 Tbsps demerara sugar
  • 1/4 cup ketchup
  • 2 Tbsps Louisiana Hot Sauce (The REAL stuff.)
  • "Bark Cheater" Glaze

  • 1/4 cup vinegar sauce (Listed above.)
  • 2/3 cup apple jelly
  • 1/4 cup light corn syrup
