Servings: Makes two 8in loaves

Prep Time: 15 minutes

Cook Time: 1 hour

Ingredients:
  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 6 Tbsp butter plus extra to garnish
  • 2 eggs
  • 1/2 cup walnuts chopped; (double the nuts if you like)
  • 3 bananas over-ripe (can use 2 or 3 bananas)
  • 1/2 cup water or milk

  • Instructions:

Combine sugar, butter, and eggs until well blended. Blend for 5 minutes with a mixer on high until fluffy. Then combine mashed bananas and water. Then combine flour, salt, and baking soda. Fold in walnuts. Pour into greased and floured loaf pans. Bake at 350 degress for for 55-65 minutes, or until toothpick comes out clean. Cover with butter and let cool under a towel.

    Notes:

Glass loaf pans work best. Use milk instead of water for richer flavor.
