Fresh Peach and Chipotle Salsa


Servings: Makes enough to service a bag of chips.

Prep Time: 10 minutes

  • 1 shallot minced (or 2 tbsp red onion).
  • 2 Tbsp cilantro the fresh stuff; minced
  • 1 canned chipotle chile minced (seeds and all).
  • 3 cloves roasted garlic
  • 1/4 tsp corainder ground
  • 1/4 tsp black pepper (fresh ground, please.)
  • 1/2 tsp Kosher salt
  • 2 tsp raw honey
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp malt vinegar
  • 1 Tbsp tequila (I like a reposado; there's no fun in a white tequila)
  • 1 lb ripe fresh peaches 1/2 in dice; peel at your discretion (I didn't).

  • Instructions:

    Whisk together all ingredients except the peaches. Then prep your peaches and stir 'em into the rest of the vinaigrette.
    For best flavor, give it all a rest covered up in the fridge at least 15-20 minutes before serving.
