Fresh Peach and Chipotle Salsa

Servings: Makes enough to service a bag of chips.
Prep Time: 10 minutes
Ingredients:

shallot
minced (or 2 tbsp red onion).

cilantro
the fresh stuff; minced
1
canned chipotle chile
minced (seeds and all).

cloves
roasted garlic
1/4
tsp
corainder
ground
1/4
tsp
black pepper
(fresh ground, please.)
1/2
tsp
Kosher salt
2
tsp
raw honey
1
Tbsp
extra-virgin olive oil
1
Tbsp
malt vinegar
1
Tbsp
tequila
(I like a reposado; there's no fun in a white tequila)
1
lb
ripe fresh peaches
1/2 in dice; peel at your discretion (I didn't).
Instructions:
Whisk together all ingredients except the peaches. Then prep your peaches and stir 'em into the rest of the vinaigrette.
For best flavor, give it all a rest covered up in the fridge at least 15-20 minutes before serving.
