Curry Roasted Cauliflower

Servings: Serves 2 - 4 as a side (Depending on your penchant for cruciferous vegetation).


Prep Time: 5 minutes

Cook Time: 30 minutes


Ingredients:
  • 1 lb cauliflower (About half a head; cut into 5/8in thick slices
  • 2 Tbsps olive oil (Give or take a Tbsp.)
  • 1/2 yellow onion Medium-sized; diced.
  • 1 tsp Kosher alt
  • 1 tsp curry powder (Fwiw, I had the "majaraja" variety.)
  • 1/8 tsp cayenne or crushed red chile (Optional if your curry powder isn't hot.)
  • Lime Wedged; for garnish.
  • Special Equipment

  • 12 inch cast iron skillet


  • Instructions:

    Preheat your oven or BBQ grill to 425F (if you're cooking indoors and have a convection oven, now is the time to use that setting).

    Add 1 tablespoon of the olive oil to a cold 12 inch cast iron skillet, Put cauliflower slices in skillet and add the diced onion over the top. Mix together the salt, curry powder and cayenne/chile flake. Drizzle another tablespoon of olive oil over the cauliflower+onion mix in the skillet and sprinkle all of the salt and curry over the veggies. Roast for 25 - 30 minutes or untill the desired amount of browned vegetable goodness is achieved. Finish with some lime wedges and a little mo' salt (if you deem it necessary).


    Notes:

    Gas grills work great for this recipe. I bring my grill to 425F on medium; then of the 4 burners I have, set  2 burners underneath the skillet to low while the two on either side of the skillet go to medium high.
