Candied Garam Masala Spiced Pecans


Servings: Preparation for 12 oz of pecan halves.

Prep Time: 10 minutes

Cook Time: 45 minutes

  • 1/2 cup water
  • 1/2 cup demerara sugar (aka Turbinado or raw sugar; about a half cup)
  • 2 Tbsps garam masala
  • 12 oz pecan halves (Usually this is one bag.)
  • 1 tsp pickling salt (Popcorn salt is good too; you just need that finer grain.)

  • Instructions: Preheat oven to 300F. Bring water and sugar to a boil, kill heat and then whisk in garam masala. Toss pecans with mixture and drain thru a strainer. Spread nuts out on a Silpat or parchment-lined sheet pan and bake for 45 minutes, turning and redistributing the pecans at the 15 and 30 minute marks. At the end of 45 minutes, pull from the oven and immediately sprinkle with the salt. Let cool to room temperature before consuming voraciously.
