Servings: makes 4-6 servings as a side.


Prep Time: 5 minutes

Cook Time: 1 hour


Ingredients:
  • 1 6 qt cast-iron Dutch oven (Required; as this is the secret to perfectly-cooked barley.)
  • 1 cup dry pearled barley
  • 1 Tbsp olive oil
  • 20 oz turkey stock (that's 2 1/2 cups)
  • 1 tsp salt (or to taste if you got salty stock)


  • Instructions: Into the Dutch oven over medium-high heat, add oil and barley. Toast the grains until evenly browned; about 5 minutes or so. Add stock and salt (watch the steam!) and bring back to a boil. Lid up, reduce to low and simmer for 45 minutes. After 45, kill the heat, leave the lid on (no peeking!) and let it all rest for another 15 minutes before serving.


    Notes: You can swap the turkey stock for your favorite flavor. Broth will also do in a pinch, but mind the salt.
