Servings: Makes about 54 two-bite cookies.


Prep Time: 20 minutes

Cook Time: 45 minutes


Ingredients:
  • 3/4 cup butter (that's a stick and a half), room temperature
  • 1/2 cup peanut butter Cunchy or not; the choice is yours.
  • 1 cup sugar
  • 1/2 cup dark-brown sugar packed
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp Kosher salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 2 cups quick oats
  • 1 cup m&m's (Pick your fave; dark chocolate and peanut butter are both good.)
  • 1/2 cup semi-sweet chocolate chips (If it's been a bad day, use chunks instead of chips.)


  • Instructions: In a stand mixer, cream butter, peanut butter, sugar and brown sugar on medium speed for about 3 minutes. Beat in eggs & vanilla until incorporated. Reduce mixer to 'stir' speed and add salt, baking powder baking soda, ap flour & wheat flour. Once all the previously mentioned stuff is incorporated, add the oats. Once the oats are mixed in, add chocolate and m&ms. If your mixer busts this stuff up, you may wanna stir 'em in by hand. Drop level tablespoon-sized dollops (measured tbsp; not from your silverware drawer) separated by 2 inches on a Silpat (or parchment)-lined half-sheet pan (about 12 - 15 per sheet). Bake @ 375F for 10 minutes or until edges just start to brown. Let rest 3-5 minutes on the sheet before transferring to a cooling rack.


    Notes: The time I listed for cooking is total time for about four sheet pan's worth done one at a time. If you're one of those bad-asses with a convection oven and an arsenal of sheet pans, you can probably bake 'em in one or two batches.
