Buttery rice with lemon thyme and lime

Servings: Serves 3-4 as a side (but I reckon you could double this using a larger pot with no problem).


Prep Time: 5 minutes

Cook Time: 35 minutes


Ingredients:
  • 2 Tbsps butter
  • 1/2 cup celery Diced; tops included (about a stalk's worth).
  • 1/2 cup yellow onion Diced (about 1/4 of a large onion).
  • 1/2 cup long grain white rice
  • 1 cup water
  • 1 Tbsp lime juice Fresh-squeezed is best (that would be the juice from one small lime).
  • 1 tsp Kosher salt
  • 1 Tbsp rice vinegar
  • 1 tsp lemon thyme Minced fresh.


  • Instructions: On medium heat in a medium saucepan, melt the butter. When the butter just starts to foam, add the celery and onion and sweat those veggies for 5 minutes. Add the rice and continue over medium heat for 5 more minutes, stirring occasionally until some of the rice rice starts to turn golden brown. Dissolve the lime juice and salt into the water and add it to the rice and veggies (watch the steam!). Bring back to a boil and then take the heat down to low. Cover and simmer for 20 minutes. After the simmer, let the rice sit off the heat (still covered) for 5 more minutes. Finish by stirring in the rice vinegar & minced herbage.
