Easy Corn and Black Bean Salsa
Ingredients:

What's Canned and Bagged

  • 12 oz frozen corn (That's one standard bag) Thawed and drained.
  • 15 oz canned black beans (One standard can) Drained and rinsed.
  • 10 oz canned diced tomatoes and chiles drained (Talking about Ro-Tel here.)
  • 12 canned black olives Sliced (It'll be about 1/4 cup's worth.)
  • The Dressing

  • 2 Tbsps cider vinegar
  • 1 Tbsp extra-virgin olive oil
  • 2 tsps adobo from canned chipotles
  • 1 Tbsp demerara sugar
  • 1 tsp Kosher salt
  • 1/4 tsp black pepper ground fresh
  • 1/4 tsp cumin ground
  • 1/4 tsp coriander ground
  • 2 Tbsps fresh cilantro minced (or 1 Tbsp dried)
  • 1 clove garlic Minced fine.

    Ingredients:

    Here's the Beef.

  • 2 1/2 lbs bone-in beef chuck roast
  • The Rub

  • 1 Tbsp Kosher salt
  • 1 Tbsp demerara sugar
  • 2 tsps garlic powder
  • 1 tsp ancho chile powder
  • 1 tsp coriander ground
  • 1 tsp cumin ground
  • 1 tsp Mexican oregano ground
  • 1/2 tsp black peppercorns ground
  • 1/2 tsp allspice berries ground
  • The Braise

  • 1 Tbsp rendered beef fat (or olive oil i suppose...)
  • 8 fluid oz American lager (Sam Adams and the like.)
  • 1 Tbsp aforementioned spice rub (Don't forget to hold some back!)

    Ingredients:

    The Cake

  • 3 oz 70% cacao chocolate (Almost a large bar.)
  • 12 fluid oz hot fresh-brewed coffee (French press joe works awesome.)
  • 3 cups sugar
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups unsweetened cocoa powder (Keep the Dutch Process in the pantry.)
  • 2 tsps baking soda
  • 3/4 tsp baking powder
  • 1 1/4 tsps Kosher salt
  • 3 eggs (Big ones.)
  • 3/4 cup canola oil
  • 1 1/2 cups buttermilk
  • 1 tsp vanilla extract
  • Peanut Butter Buttercream Frosting

    Adapted from the Cream Cheese Frosting recipe on pg. 171 of my 12th ed. BHG Cookbook.

  • 1/2 cup creamy peanut butter
  • 1/2 cup butter (That's one stick; room temperature.)
  • 1/2 tsp Kosher salt
  • 1 Tbsp spiced rum
  • 3 fluid oz milk
  • 20 oz powdered sugar (That's roughly 5 cups.)
  • Chocolate Peanut Butter Ganache Frosting

  • 8 fluid oz heavy cream
  • 1 tsp vanilla extract
  • 6 oz semi-sweet chocolate chips (Half a standard bag.)
  • 1/2 cup creamy peanut butter
  • 1 Tbsp light corn syrup

  • 1 1/2 lbs Tenderized bottom beef round or "cube steak"
  • 2 tsps Kosher salt
  • 1 tsp onion powder
  • 1/2 tsp paprika

  • 1 1/2 cups all purpose flour
  • 2 eggs
  • 1 cup buttermilk

    Ingredients:

    For the Braise

  • 3/4 lb lamb shoulder chops Usually 2 chops cut 1 inch thick.
  • 1 tsp black pepper Ground fresh.
  • 1 tsp mesquite smoked salt (Or plain Kosher; whatever.)
  • 2 tsps olive oil
  • 2 fluid oz rye whiskey (That's a quarter cup.)
  • 2 fluid oz sweet vermouth (Again, a quarter cup.)
  • 1 Tbsp Angostura bitters
  • 1/2 oz dried pitted cherries Halved (About 2 Tbsps).
  • 1 medium yellow onion Fine dice.
  • 8 oz white mushrooms Halved (one standard package's worth).
  • 1 bay leaf
  • To Finish the Sauce

  • 1 Tbsp butter
  • 1 tsp Angostura bitters
  • Kosher Salt (Maybe; but I doubt it.)

  • 12 oz old-fashioned rolled oats (About 4 cups.)
  • 1 oz flax seed (About 3 Tbsps.)
  • 1/2 oz puffed wheat (About 1 cup.)
  • 1/2 oz wheat bran (About 1/4 cup.)
  • 1 oz wheat germ (About 1/4 cup.)
  • 2 oz sliced almonds (About 1/2 cup.)
  • 1 oz raw sunflower nuts (About 1/4 cup.)
  • 3 oz sugar (About 1/3 cup.)
  • 3 oz honey (About 1/4 cup.)
  • 3 oz coconut oil (About 1/3 cup.)
  • 2 Tbsps sweet vermouth
  • 1 tsp Kosher salt
  • 1 tsp cinnamon (Ground, of course.)
  • 4 oz dried strawberries Sliced 1/8 inch thick.
  • 3 1/2 oz 85% Cacao Dark Chocolate Usually one large bar's worth; chopped.
  • 2 oz white chocolate chips (About 1/4 cup.)
