Abstract:

It's always good to have a recipe that you can throw together on a moment's notice when the occasion for that unforeseen social gathering arises. The secret to this versatile and easy pasta salad lies in the power of a bag of frozen vegetables.




Recipe: Jump to the detailed recipe. (or, keep reading for the gist of it) -

  • 16 oz rainbow rotini
  • 12 oz frozen vegetable medly (Pick your fav; stir-fry mixes are usually good.)
  • 16 fluid oz bottled Italian dressing NOT fat-free. (fwiw, I like Wishbone Robusto here.)
  • 3 oz black olives sliced (that's half a standard can)
  • 12 pickled pepperoncini (About half of a 12 fl oz jar.)
  • 2 Tbsps Parmesean cheese microplaned
  • 20 grape tomatoes halved (optional)

  • Cook pasta in liberally-salted water for 7ish minutes until just al dente. Add frozen vegetables to the water and then drain and rinse with cold water until room temperature. Reserve 1/3 cup of dressing and add the remaining majority to the pasta/veg mix. Stir in Parm, olives, and pepperoncini; lid and refrigerate for at least 3 hours (overnight would be much better). When ready to serve, stir in tomatoes if desired, and adjust flavor with reserved dressing.
