Something Edible on Video: Garam Masala Grilled Zucchini with Curry Yogurt Sauce

Abstract:

As good as it is, grilling doesn't always have to be about steaks and chops, or even burgers and dogs. The first few zucchini out of my garden almost always get treated to some sexy grill marks courtesy of this recipe. The garam masala grill seasoning really enhances the flavor of the squash, and finishing with a tangy curry yogurt sauce really balances out the dish. Slice 'em thick and put a good sear on that zuke - if you're looking for a good vegetarian alternative for backyard grilling, this is a gem; and trust me, you won't miss the meat at all!

The Veggies

  • 2 lbs zucchini Small to medium squash; cut on the bias 3/4 in thick
  • 3 Tbsps extra-virgin olive oil
  • 2 Roma tomatoes sliced thin (for garnish)
  • fresh thyme more garnish (optional)
  • Garam Masala Grill Rub

  • 2 tsps Kosher salt
  • 1 tsp garam masala
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • Yogurt Curry Sauce

  • 1/2 tsp madras curry powder
  • 1 tsp Kosher salt
  • 1 Tbsp key lime juice (standard lime juice works too)
  • 1 Tbsp rice wine vinegar
  • 1/4 cup low-fat mayonnaise
  • 3/4 cup plain low-fat yogurt

  • For the Curry Yogurt Sauce, whisk together all your ingredients (simple, huh?).

    For the Zucchini, preheat grill for high heat (around 450F). For each slice of zucchini, drizzle each side with olive oil and then sprinkle each side liberally with garam masala rub (you won't need it all). Grill for 3 - 4 minutes on each side, ensuring that there are plenty of sexy grill marks. Remove to a plate, drizzle with yogurt sauce and garnish with sliced tomato and fresh thyme.
